A welcome addition to the already diverse food scene in the area, SouvlakiBar is planning to open its third location in Sterling. The Greek eatery offers authentic gyros, a type of wrap, as well as rice bowls, salads, dips, and other traditional Greek dishes. The new fast casual spot has already impressed many: with its first Alexandria location, Souvlaki won the “Best Gyro in NoVA” award last year. At the moment, the only information on its opening is on the restaurant’s website, where it’s listed as “Summer 2018.”

Fire Works Pizza (Sterling)

Following the closing of the Coal Fire pizzeria’s Cascades Overlook location, another pie joint, Fire Works, looks to take its place. This is not the first spot of this specialty pizza parlor — they have locations in Arlington and Downtown Leesburg — but they are preparing to expand to Sterling for their third shop. They have become known for their creative and inventive takes on pizza, such as their “Guadalajara” (a Mexican inspired ‘taco’ style pizza stacked with toppings like spiced beef and sour cream) and “Barcelona” (a pizza piled high with Spanish tapas ingredients such as olive tapenade, chorizo, and red peppers.)  The exact date of opening is still unknown; both the Cascades Overlook Twitter and Fire Works’s site simply say “coming soon”

Marumen (Sterling)

The vacant space that was formerly home to the Ocean Blue sushi restaurant will be vacant no longer. Ocean Blue was one of the only places in Sterling that served ramen, but while they did offer it as a part of their menu, it wasn’t a large portion of their offerings. That will soon change, as Sterling will finally gain a dedicated ramen spot in Marumen Ramen Shop. The menu offers an incredible variety of ramen dishes, with everything from miso to mazemen (a style of ramen that replaces the typical broth with a spicy sauce,) and it also offers tsukemen, a dish where ramen noodles are served with a separate broth. According to the Cascades Overlook Twitter, this space is slated to open sometime in October.

Poke Sushi Bowl (Sterling)

The only shop on the list to already have opened, Poke Sushi Bowl’s sixth spot has been operating in the Cascades Overlook plaza for about three months. Their simple menu revolves around poke, a Hawaiian dish made with diced fish. With choices of around a dozen different vegetables and other toppings to add, each bowl of poke can be customized to satisfy even the most discerning of tastes. The restaurant’s marquee is rather unfortunately hidden behind a large tree, but it is well worth the effort to find.

Post Coffee Bar and B Doughnut (One Loudoun pop up)

With their first location in Leesburg, B Doughnut became an overnight hotspot thanks to their Everything Bagel Doughnut, a savory doughnut/malasada hybrid covered in bagel seasonings and filled with cream cheese. Since then, the business has expanded to at least six more spots, and they now have their eyes on starting up a new One Loudoun pop up in conjunction with another local business, Post Coffee Bar. They will serve their specialty doughnuts and coffee out of unique retrofitted shipping containers, which were lifted by crane and placed into the empty plot of land right next to Uncle Julio’s. These buildings will be home to a rotating lineup of pop up shops, with B Doughnut and Post being the inaugural ones. This exciting addition to the area is expected to open by the end of September.
