Like clockwork, as the summer season fades into the annual torrent of fall hues, more than the color of the leaves are changing. Pumpkin spice lattes, pumpkin muffins, and various other pumpkin flavored treats are temporarily invading many restaurants menus in order to feed the seasonal frenzy. However, they are not the only places where you can find festive treats this season. With these simple pumpkin recipes you can enjoy the same season treats from the comfort of your own home.

 Spicy Pumpkin Soup

Ingredients

  • 4 Tbsp unsalted butter

  • 2 medium yellow onions, chopped

  • 2 teaspoons minced garlic

  • 1/8 to 1/4 teaspoon crushed red pepper

  • 2 teaspoons curry powder

  • 1/2 teaspoon ground coriander

  • Pinch ground cayenne pepper

  • 3  cans 100 percent pumpkin or 6 cups of chopped roasted pumpkin*

  • 5 cups of chicken broth

  • 2 cups of milk

  • 1/2 cup brown sugar

  • 1/2 cup heavy cream

Directions

1) Melt butter into a saucepan over medium-high heat. Add in garlic and onions and
cook until soft then add in spices.

2) Add pumpkin and five cups of chicken broth to the mixture and stir.

3) Bring the mixture to a boil then reduce heat to low for 10 to 15 minutes.

4) Blend the mixture in a food processor and then return the mixture to the stove.

5) Add brown sugar, milk, and cream and heat the mixture on low heat.

6) Serve mixture in individual bowls.

 Pumpkin Pancakes

Ingredients

  • 1 1/4 cups all-purpose flour

  • 2 tablespoons sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon ginger

  • 1/2 teaspoon nutmeg

  • 1/2 teaspoon salt

  • 1 pinch clove

  • 1 cup 1% low-fat milk

  • 6 tablespoons canned pumpkin puree

  • 2 tablespoons melted butter

  • 1 egg

Directions

1) In a bowl, mix together flour, sugar, baking powder, spices, and salt.
2) In a separate bowl whisk together melted butter, egg, pumpkin puree, and milk.
3) Mix the contents of the two bowls together.
4) Pour approximately ¼ cup of batter in a medium saucer for each pancake.

5) Cook 3 minutes on each side.

Pumpkin Brownies

Ingredients

  • 1/2 cup butter, room temperature

  • 1 cup sugar

  • 1 teaspoon ground cinnamon

  • 1 egg

  • 1/2 cup Pumpkin Puree

  • 1 tsp vanilla

  • 3/4 cup all-purpose flour

Directions

1) Preheat oven to 350 degrees.

2) Blend together the butter and sugar using an electric mixer, then add in all the
other ingredients.

3) Bake for approximately 25 minutes or until golden brown.
